Step one Soak the dried mushrooms and the dried shrimps, if using, in the hot water for 30 minutes, until soft. Drain, reserving the soaking liquid, and thinly slice the mushrooms.
Step two Drop the noodles into a pan of boiling water, cover and take off the heat. Leave to soak for 1 minute, then drain. Toss with a little of the oil, to separate the strands.
Step three Heat the rest of the oil in a large wok. Add the garlic and ginger and stir-fry for a few seconds. Add the bacon, garam masala paste and squid and stir-fry for 2 minutes. Add the mushrooms, dried shrimps and scallops and stir-fry for a further minute. Add the prawns, reserved soaking water, soy sauce and rice wine or sherry, followed by the noodles, and toss together gently over a high heat, using two forks, for about 1 minute, until everything is hot and well mixed. Toss in the spring onions and serve immediately.
